Favorite Anime Openings/Endings
what are yours?
I admit it. I love watching anime Openings and Endings. A friend of mine constantly berates me about making him sit through the opening of show, and I'll do it even if I'm watching a series straight through.
Here are a few of my favorites:
Tank: Cowboy Bebop
Obvious opening choice, and a classic by all reckoning.
Duvet: Serial Experiment Lain
There's a longer version that I like listening to. It's sad, but its so haunting.
Higurashi no Naku Koro Ni: Higurashi no Naku Koro Ni
Spoookie.
Season's Call: Blood+ (2nd OP)
Colors of the Heart: Blood+ (3rd OP)
Blood+ has some good OPs, but I especially love the second, by HYDE, and the third opening, mostly for the art on the 3rd OP. I think there's a reason HYDE is such a big star in Japan. His music rocks.
Lilium: Elfen Lied
It's in latin! What's not to love? A warning on this one, though, as it has lots of nudity in it. This is easily one of my favorite openings, though.
For Fruits Basket: Fruits Basket
I can't imagine not loving this opening. In the anime club we would sing it out loud every week when we watched the next episode in the series.
The Sacred Moon: Tsukihime Lunar Legend
Another one of those haunting melodies. I have a thing for them I guess.
Hare Hare Yukai: Melancholy of Suzumaru
This is possibly the most popular anime ED ever.
To All Tha Dreamers: Yakitate Japan (2nd ED)
Sorry about the poor image quality. I couldn't find one on Youtube. As for the ED, its a show about bread making!! And, it has this truly awesome ED theme! And, yes, I have watched the whole series.
Okay, I know I haven't taken all the good ones. What do you like?

Off the top of my head..
Kiiroi Vacanses - Pani Poni Dash !
Copperia no Hitsugi - Noir
Soramimi Cake - Azumanga Daioh
At least these I wouldn't dream of skipping, no matter how much the rest of the audience pleads.

Watashi no Tamagoyaki (translated, My Omelette) from the anime Dragon Half.
This one is so rare, I couldn't find a link that had the music uploaded. I have the song, but, here's the lyrics. (I'm on dial up, or I'd have looked for the video on youtube or something.) Now, this one has the actual words, and the translation with it. It's not as long as it looks here. If anyone wants the song, let me know, and I'll try to email it to you. Just pm me with your addy.

I'll find some of these later, but I'm sucker for:
Hellsing -> World Without Logos
Fushigi Yugi - > Itoshii hito no tameni
Twelve KingdomsJunni Kokki
Kaledo Star (that ending roller-blade sequence just kills me)... -> grr - don't know the song name...
Nana - >Rose
Full Moon wo Sagashite - > ??
Ayashi no Ceres --> Scarlet (I own several cels from this opening sequence actually)

That one's great. Another favorite from my anime club days. It goes well with Ai Sincere Heart from Excel Saga and Love Tropicana from Jungle wa Itsumo Hale Nochi Guu.

I looked but I was unable to find it as well. I've never seen the anime, but now I know that its where that singing winged woman in Right Now comes from!

I was curious, so I went ahead and found them. I've only seen Hellsing of those. I couldn't find the new Hellsing OP, but I assume you meant the old one. I could be wrong, though.
Logos Naki World: Hellsing
Itooshii Hito no Tame ni: Fushigi Yuugi
Juuni Genmukyoku: Twelve Kingdoms

I don't know what you have, but anything by Utada Hikaru (example, slightly different example, Namie Amuro (example and a quite different example), Boa (example), Maaya Sakamoto (example), Yoko Kanno (example), Yuki Kajiura (example), Morning Musume (example) and its many spin-offs (example), X Japan (example), L'arc En Ciel (example), or Megumi Hayashibara (example, example to para para, and one more because she did much more than Evangelion), Orange Range (example), UVERworld (example), Tokyo Jihen (example), Two Mix (example), Nobuo Uematsu (example), or Suga Shikao (example).
Soundtracks from anything above plus Gunslinger Girl, Trigun, and Lodoss War (also the OAV).
I know there's more that I just can't think of...
Why all the links? OCD probably.

I love both the opening as well as the ending for Azumanga Daioh (the ending Raspberry Heaven is one of my favorite songs period). Another fave is the opening from Magic Knights Rayearth, Yuzurenai Negai.
An anime jukebox...? I'll root for anything Megumi Hayashibara. Particularly Saber Marionette. ^_^
Also...I have a decent selection of weird anime mp3s...stuff from Azumanga Daioh, Slayers, Aa! Megami-Sama, Rayearth, Full Metal Panic, Noir, and a bunch of random others (my laptop is running a scan right now, so I can't recall the whole list) but I can get a list together if anyone wants a copy of a song.

There was another anime opening I forgot about... Bubblegum Crisis.

*tries to think of openings/endings that haven't been mentioned yet*
Mahoraba's opening... I like the pace of Lucky Star's opening, and Code Geass's second opening I like as well... ah! Otoboku's ending is very nice! What else... what else that hasn't already been mentioned... etto... Hayate no Gotoku's opening and ending songs are rather nice... hmm. Regardless of the quality of the shows themselves, VanDread's first opening and both Strawberry Panic's openings are enjoyable, and RahXehpon's opening (Sakamoto Maaya - Hemisphere) is definitely wonderful! (Though I maybe prefer Strawberry Panic's first opening slightly.)
Bokusatsu Tenshi Dokuro-chan's opening is very amusing. Elfen Lied's ending and Cossette no Shouzou's ending are very nice. Marmalade Boy's opening is also pleasant, and... what else...? Ouran High School Host Club's opening (apart from the English lines) is also enjoyable.
...and I know this has been said before, but I have to second that Higurashi no Naku Koro ni's opening (and to a lesser extent ending) is absolutely wonderful. *smiles*
Definitely more that I've forgotten, but those are the ones that come to mind at this time. Oh! 'Rise' by Origa, from a Ghost in the Shell-related anime, its opening; also, the Death Note opening and ending. Hmm... and Genshiken's opening... and the .hack//LIMINALITY openings, of course... ah! Karin's opening and ending, too. Haibane Renmei's opening and ending too... the Mahou Sensei Negima openings and endings are also nice. Ah! Also, the Rozen Maiden openings/endings (both original and Traumend)! (Hopefully that should be it for now. *sends*)

Heh. Well I've got about 4 gigs worth of anime music - not everything you guys mentioned, but I'll see what I can come up with. I"ll have to pick and choose some, 'cause we don't have enough space on my account to upload all of it - I may stick with mostly vocal pieces instead of scores (except for a few exceptions). Otherwise, I'll see about expanding my selection some for next time. (I've been woefully neglectful about watching anime for the last year or so - happens when you have babies and jobs...go figure)
Hmmm..maybe I"ll toss some stuff in there by Glay or Do As Infinity too...

My favourite Anime Openings/Endings?
Why, the German version of the Captain Future intro springs to mind. They had to create that music from scratch, since the music and the lyrics were on one track. And I think it's a good thing that they did.
Captain Future - German Intro (Best. Titlemelody. EVAR!)
Here is the original Japanese opening for comparison:
Captain Future - Japanese Opening
I'm not going to post the American Intro. It was too awful.
I like three of the four different Japanese openings of "Fullmetal Alchemist". Even the first one, which is a bit cheey.:
FMA Opening 1
FMA Opening 3
FMA Opening 4
And the Endings (also in Japanese), I like the first and the last.
FMA Ending 1 (Here's the music video of the Full Song, by the way: "Kesenai Tsumi" by Nana Kitade
FMA Ending 4
For Blood+, I like especially the first and the third. Japanese again.
Blood+ Opening 1
Blood+ Opening 3
I *love* the first ending of Blood+, both the song and the art style. I love the art style in the second one too, and I always have to sing the song along. The third ending makes me melt away. And the fourth one is just nice. And yet again, Japanese.
Blood+ Ending 1
Blood+ Ending 2
Blood+ Ending 3
Blood+ Ending 4

*snerk*
Well the jukebox was updated, but the software had all kinds of probs with importing the names and the asian kanji, so there's a couple of songs that just list unknown as the name. *eyeroll*
When I get a chance I'll try to fix that up....
If you have a question as to what one of the songs is, just let me know which one and I'll try to figure it out for you - lol.

She has an awesome voice--both singing as well as voice acting. It is no wonder she is so popular!

I forgot Escaflowne!
I was reminded by Dance of Curse on the jukebox, though.
But, how could I forget Escaflowne?
